Bikini
Serves 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Combine all the ingredients inside a saucepan, bring to a simmer, mixing until the sugar dissolves. Next, take off the burner allowing it to cool down fully. Transfer into a sterilised bottle, close it and store in the refrigerator, where it will keep for around a month.
For the Premix: Pour all the liquid ingredients into one large bottle, let it rest for 60 minutes, then strain preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Add 85ml of your cocktail base to a cocktail shaker containing ice, and stir carefully for a minute to chill. Filter into a frosted cocktail glass or equivalent, decorate with some cranberries adding the final touch using a quick spritz of the essential oil over the drink.
